Default Question about water leak under the sink

Hey friends! I’m a new bird owner and have a 1984 FC35SB.

One of my water lines coming out of the water pump sprung a pinhole leak and I have found the source and just need to replace the tubing. I have 2 questions:

1) is there any special type of tubing I need to get or can I just swing by a hardware store and buy whatever is the same inside diameter?
2) there are 2 things in-line between the pump output and the bus. One of them is a pressure gauge and I don’t know what the other is. Do you know what the other thing is and if there are any issues in eliminating both of these to simplify the system?

The first fitting looks like a quick disconnect for replacing the pump. You should carry a spare ...you don't want to lose a water pump and have to go find one! Any water safe lines will work as replacements in the bus. lots of people use pex as a replacement and shark bites can be your friend. Any hardware store should have something you can use.
I'm guessing the gauge shows water pressure?

Looks like a check valve to me too.
