We purchased a quantity of individual pieces of Corelle "china" (plates, bowls, etc.) sufficient for our needs. Corelle is very difficult to break or chip. It's also not particularly expensive. The plain white that we purchased is also quite durable. We're using it daily as our "breakfast" china and it looks as new as when we bought it. (The Roadtrek proved to be so 'tight' that we preferred paper plates instead of washing dishes. We still carry a couple of the Corelle bowls with us, since paper bowls just aren't very good.)

We also purchased some plastic tumblers -- but use regular coffee mugs (we have a zillion of them anyway).

A few strategically placed dish/hand towels keeps stuff from rattling as we go down the road.
