Default Butternut squash for Ron C.

Ron,don't read this if your looking for bacon.


one large butternut squash
1lb hamburger
1/2 lb ground sausage
a big handful of kale
a big yellow onion


I made small meatballs with the hamburger and sausage and browned them up nice in a skillet,adding the onion after i cut it into big pieces.
Cook the onion until its going clear,but leave it crispy.
I cook the squash in the microwave until its knife tender,i hate peeling those things,so its easy to cook it whole and then scoop out the meat with a spoon.
I left it a little firm for this meal.



Put all that stuff in a casserole pan with the squash on the bottom of the pan,dump the meatballs on top,grease and all,and the onions go on top too.
Add the kale and bake in the over at 375 for 30 minutes.
The kale will be crispy on top and the rest should be nicely done but not mushy,i like the squash a little firm.
Of course you salt and pepper to taste.
This is good!!!!

Sound good, I'll make it when we get home and have more elbow room.

A nice looking silver and blue Wide Body pulling a trailer came in here at Jolly Roger in Marathon, FL yesterday afternoon. I'll find out who they are and put on a birds spotted post.

OHH,this dinner was fantastic!
This time of year we cook lots of winter squash.
Its easy to cook,if you cook it before you try to peel them.
I cook the squash seeds and all,they scoop right out after cooking.

You can roast the seeds like pumpkin seeds and add a little cinnamon sugar to them
