Indeed. Then there's the fact I discovered sous vide prep for steaks and fish, wish I would have known about it long ago.

We just sous vide 15 racks of baby back ribs for our annual 4th of July cookout. Finished them on the grill to get a nice "char". Best way to prepare them IMHO.

I live in Eastham and work in Provincetown. Sous vide is great, if cooking long duration watch ph so no one dies

I have an 18lb brisket simmering away in my sous vide right now. Only 43 hours left! Smoke it for 2-3 hours hard on hickory, seal it up, and throw it in for 46 hours at 139F. This is the 3rd one I've done like that and it is absolutely the best ever. I know it's sacrilege, but I don't care.
