next time you heat it up, mist the radiator with the hose and see if it stays at 205 or drops to 180 where the thermostats open. If it drops, I'd say the radiator isn't conducting enough heat transfer.

Remember, temperature delta drives heat exchange. So, if your ambient isn't at its max, which i suspect it is not, any rise in ambient temperature would see the same rise in system temp. So if today you were running at 70 F with system temp of 210 F and in the summer you'll see 100 F, your system will likely be running around 240 F which will likely result in meltdown.

How about dropping the temp sensor in boiling water, just to check it is reading right? If the sensor were off by 30 degrees, you'd be running right at 180, which is where it should be. Assuming your ambient temps are modest, the cooling system should have additional cooling capacity so when it gets real hot, it'll still stay under control.

Default Eureka!

It turned out to be a wrongly terminated wire on the capacitor going to the radiator blower. I needed to get a wiring schematic sent from Grainger to realize my error. Once I fixed that problem and started the ONAN, the air flow from under the coach literally blew my hat off as I went under to inspect. Never had that kind of flow through the radiator before. Now the temperature stays at a steady 185*F (for an hour anyway!) with several resistive loads on it.
I want to thank everyone who shared their time and expertise with me. Bill Pape has been an especially wonderful resource for me during my trials with my FC, and for that I am truly thankful.
