If you can see the screws in there you can reach your hand in and see if it is wet. If it’s not wet you don’t need that panel off any further.
Did you look inside (mine is under the bed) where the water filter and tank fill solenoid are? Not sure if f that is under the bed in yours but that’s where a lot of the water routing happens and it is near where you see the leak. Could simply be a loose hose clamp. Lots of them in that area.

I went over everything before delivery. No leaks anywhere. If it had been leaking as you say, it would have left a puddle under that bay the 2 nights you were parked before you got back to AZ. It's a 31 year old bus. Even though I believe that Mark (the owner before me) updated the plumbing, it's still a house in an 8.5 earthquake every time it rolls down the road. I had several leaks in the water heater bay. Nothing serious. I would never run off city water in an old bus, not even a new one. Water pressure is generally too much.
I would check above the water heater. There are pipes coming down thru the floor. They run in the chase on the wall next to the bed. But, I would think that if it is leaking there that the carpet in the bedroom would be wet.

No worries, I realize it’s 31 years old. On the second night on the way back, I noticed that the pump was cycling on and off. So it was leaking somewhere. Took couple of weeks to track it down. When I found it, it was minor. A drip every couple of seconds. Just enough to get the floor in the bay wet. But has since gotten worse
